Cranberry and Brie Tarts with Thyme Honey

Thanksgiving is right around the corner, and I am showing you one of my favorite holiday appetizers. Growing up, my mom would always make baked brie and I have very vivid memories of all of my family members gathering around the platter and enjoying every bite. So this holiday season, I thought it would be fun to turn my mom’s classic app into personal tarts for the whole family to enjoy.

These tarts are made with crescent dough (a must-have on our thanksgiving table) and are filled with homemade cranberry jam and creamy baked brie. They’re topped with a thyme-infused honey and flaky sea salt. Hopefully this recipe will inspire you this holiday season.

Baked Brie and Cranberry Crescent Tarts with Thyme Honey

Makes: 8 Tarts

Active Time: 15 minutes

Total Time: 30 minutes





Ingredients:

  • 2 cups fresh cranberries

  • 1 orange, zest and juice

  • Kosher salt

  • Freshly cracked black pepper

  • 1 cup honey, divided

  • 1 roll crescent pastries

  • baking brie, cut into ½ inch pieces (rind on or off depending on your preference)

  • 1 bunch fresh thyme or 1 teaspoon dried thyme (optional)

  • Flaky sea salt




Steps:

Preheat the oven to 375 degrees farenheight

In a saucepan, cranberries, 1/2 cup honey, oj, 1 teaspoon kosher salt, and a healthy crack of freshly ground black pepper. Cook over a medium-high heat, stirring frequently, until the cranberries start to break down, about 5-7 minutes. 

Roll out the crescent roll dough and, using your fingertips, seal any perforations. Cut the dough into 8 equal pieces. Fold the edges up a ¼ inch to create a border. Place down a spoonful of cranberry sauce, top with a slice of brie, and finish with another spoon of cranberry sauce. Crack freshly ground pepper on top and bake in the oven until the rolls are golden brown and the cheese is melted, about 12-15 minutes. 

While the pastry tarts bake, combine 1/2 cup honey and 1-2 sprigs of thyme. Cook over a low heat until fragrant, about 5 minutes. 

Drizzle the tarts with honey and top with flaky sea salt. Serve immediately. Enjoy!
