Radicchio-Arugula Salad with Date-Dijon vinaigrette

You know those salads that are satisfying and delicious, you ask yourself if it could really be that simple? This right here is that salad. 

This go-to salad feels like an elevated version of the traditional arugula and parm salad that you would order from your favorite restaurant. I’m here to show you just how easy it is to recreate at  home.

The ingredients hit all the right flavor points - sweet, tart, bitter, with a punch of saltiness. You probably already have everything you need! The date syrup adds a distinct sweetness  (imagine the lovechild of maple syrup and molasses), the dijon adds tang, and the parmesan has a natural nuttiness that pairs perfectly with sesame in the dressing.

Whether you’re setting a romantic table for two tonight or preparing for a large dinner party, this salad is your golden ticket to impress anyone -  and we don’t have to tell anyone how easy it was.

A great tip for making it ahead of time: Put the dressing on bottom, lettuce on top, and toss the salad right before guests arrive.

Radicchio Arugula Salad with Date-Dijon Vinaigrette

Serves: 4 people

Active Time: 15 minutes

Total Time: 20 minutes

Ingredients:

  • 1/2  head medium round red radicchio 

  • 5 cups arugula 

  • 1 teaspoon  dijon mustard

  • 1 teaspoon date syrup or aged balsamic glaze

  • 1 tablespoon apple cider vinegar

  • Kosher salt

  • Black pepper

  • 1/4  cup extra virgin olive oil 

  • 1 4oz block Parmigiano Reggiano, shaved, plus more for serving 

  • 1 tablespoon toasted sesame seeds

Steps:

MAKE THE DRESSING: Combine 1 tablespoon apple cider vinegar, 1 teaspoon dijon mustard, 1 teaspoon date syrup in a medium sized bowl. Season with kosher salt and freshly ground black pepper to taste. 

Whisk 1/4 cup olive oil in the bowl to combine using a fork or whisk until fully incorporated.

PREPARE THE SALAD: Add arugula, radicchio and 1/2  tablespoon toasted sesame seeds to the medium bowl. Season lettuce with kosher salt (Remember: Always salt your salad, it’ll make it taste better)

Add 3 oz shaved parmesan to the salad. Toss to combine until the salad is well mixed.

Top with remaining parmesan shavings and sesame seeds to serve.
