Cherry and Cheddar Panzanella Salad

Ingredients:

  • 1 cup cubed sourdough bread (about 1-inch cubes)

  • 1 cup extra-virgin olive oil, divided

  • kosher salt and freshly ground black pepper

  • 1 small shallot, minced

  • 1/4 cup white balsamic vinegar or white wine vinegar

  • 1 teaspoon sumac, plus more for garnish

  • 1 cup cherries, pitted and torn in half

  • 1 head radicchio, cored and quartered, leaves separated

  • 1/4 cup diced white cheddar cheese

Steps

Preheat the oven to broil.

Add bread cubes to a sheet tray and toss with 1/2 cup olive oil. Toast for 1-2 minutes, tossing halfway through, until the bread is golden brown. Remove from the oven and season with salt to taste, set aside.

In a large bowl whisk together combine shallot, vinegar, and sumac. Stream in remaining 1/2 cup olive oil and whisk to emulsify. Season with salt and pepper to taste.

Add bread, cherries, and radicchio to the bowl and toss to combine. Adjust seasoning to taste.

To serve, to a large plate. Top with cheddar, drizzle with any remaining dressing left in the bowl, garnish with optional sumac and enjoy!
