Peaches Foster with Greek Yogurt and Sumac

Ingredients:

  • 1/2 stick (4 tablespoons) unsalted butter, cut into 1 tablespoon pieces

  • 2 medium ripe peaches, cut into segments

  • 1 teaspoon sumac, plus more for garnish (or lemon zest)

  • 4 tablespoons brown sugar

  • 1/2 teaspoon kosher salt

  • 2 tablespoons heavy cream

  • 2 teaspoons spiced dark rum

  • 2 cups greek yogurt, divided into 1/2 cup portions

  • flaky salt, for garnish

Steps:

Melt butter in a medium skillet over medium-high heat until bubbling. Once bubbling, add in the peaches and sumac (or lemon zest) and cook for an additional 2 minutes. Sprinkle in the brown sugar and kosher salt and cook 2 minutes more.

Add in the heavy cream and swirl to combine. Add in the rum and carefully light the rum on fire using a stick lighter, the mixture should remain on fire for 15-20 seconds. Continue to cook for 2 minutes more to thicken. remove from the heat.

To serve, dollop 1/2 cup Greek yogurt onto a plate and spread to create a well for the peaches. Top each plate with 4-6 peach segments and drizzle with pan sauce. Garnish with more sumac (or lemon zest) and flaky salt and enjoy!
