Apple Cinnamon Oatmeal Bites

Makes 10 Oatmeal Bites

I remember growing up and always picking the apple cinnamon oatmeal packet, there was something so cozy about diving into that spiced oatmeal, I just couldn't get enough. These bites are the perfect slightly sweet treat to have at any time of the day. They're easy to make and my go-to when I want something satisfying but not too unhealthy.

Ingredients:

  • 1/2 cup coconut oil

  • 2/3 cup maple syrup

  • 1 medium sweet-tart apple, cubed (pink lady, granny smith, or honeycrisp)

  • 2 large eggs

  • 2 teaspoons vanilla Extract

  • 1 teaspoon kosher salt

  • 1 teaspoon cinnamon

  • 1/4 teaspoon ginger

  • 1/4 teaspoon nutmeg

  • 3 cups old fashioned rolled oats 

  • 1/2 cup flax seeds

  • Garnish: Melted nut butter and flaky sea salt (optional) 

Steps:

Preheat the oven to 350 degrees F

In a small pot over a medium heat, combine coconut oil, apples, and maple syrup. Cook 5-7 minutes until softened and fragrant. Season with kosher salt and mix together.

Prepare a parchment lined baking sheet.

In the same pot, add oats, flax, cinnamon, ginger, nutmeg, and kosher salt and stir to combine. Then, add in the eggs and vanilla extract and mix one more time to combine.

Using an ice cream scoop, scoop the mixture onto a parchment lined baking sheet. 

Bake in the oven for 10-12 minutes or until the tops are golden brown and the bites are nice and firm. 

Drizzle melted nut butter and sprinkle flaky sea salt. Enjoy
