Grandma Sue's No-Bake Snowball Cookies

My grandma Sue used to always send these to me at summer camp and every time I make them they remind me of her. Ugh, she was truly the best. These treats are only a few ingredients and hit every flavor note. Sweet, crunchy, creamy, tangy, and salty. They are truly divine.

They’re a great snack to have around the house all year round, but they’re especially enjoyable for the holidays. These cookies are a perfect sweet treat for your guests to snack on when they arrive or served as an additional easy holiday dessert. But if you’re holiday is looking a bit different this year and you won’t be celebrating in person, these cookies ship really well (trust me, they made it to summer camp every year). I love sending out cookie boxes around the holidays, and Grandma Sue’s cookies are the perfect ‘holiday card’ to let loved ones know you’re thinking of them.

Grandma Sue’s No-Bake Snowball Cookies

Makes: 12 cookies

Active Time: 10 minutes

Total Time: 1 hour 10 minutes

Ingredients:

  • 3 cups crispy rice cereal

  • 1 1/2 cups mini marshmallows

  • 1 cup nut butter (peanut or almond)

  • 1 bag white chocolate chips

  • 1/2 teaspoon Kosher salt

  • 1 tablespoon sumac

  • Flaky sea salt


Steps:

Prepare two parchment-lined baking sheets (preferably the holy sheet)

In a large bowl, combine crispy rice cereal and mini marshmallows

In a double boiler, melt white chocolate chips in a large bowl. Add in peanut butter and stir to combine until glossy and melted. Sprinkle in kosher salt. Stir to combine. 

Pour the crispy rice cereal and mini marshmallows into the bowl of stir to combine until well coated. 

Using a cookie scoop, scoop snowball-sized balls of the mixture onto the parchment-lined baking sheets. Sprinkle with sumac and flaky sea salt. Place in the refrigerator to set, about 15 minutes. 

Store in an airtight container in a cool place for up to a week. Enjoy!
