Summer Peach, Strawberry, and Burrata Salad

I absolutely love peaches and absolutely love burrata. I’ve been seeing tomato and burrata salads everywhere but what about a peach and strawberry burrata salad. HAVEN’T SEEN THAT.

Well here it is folks, the ultimate summertime salad - It’s sweet, savory, and so refreshing! Like most things in life, it’s best shared with family and friends, but you could (and should) enjoy this gorgeous plate all by yourself too! Whether its part of a larger spread or just an afternoon snack, dig your fork into this salad and chase it with a cold beverage and a smile.

Summer Peach, Strawberry, and Burrata Salad

Serves: 2-4 people

Active Time: 10 minutes

Total Time: 15 minutes

Ingredients:

  • 1 ball burrata

  • 1 peach, cut into slices

  • 1/2 c strawberries, sliced

  • 1/4 c snap peas, sliced in half lengthwise

  • 1/4 c arugula

  • 1 bunch fresh basil

  • Slivered almonds, toasted (optional)

  • Aged-balsamic glaze

  • Good quality olive oil

  • Salt and pepper

Steps:

Lay your arugula on a plate, lightly sprinkle with salt. Top with peaches, strawberries, snap peas, and dollops of burrata.

Shower your salad with a beautiful handful of basil leaves, sprinkle on toasted nuts, drizzle with olive oil and balsamic glaze. Finish everything off with some more salt and freshly cracked black pepper. Enjoy!
